One of my favorites is the 2009 Alexan\u00adder Val\u00adley Caber\u00adnet Sauvi\u00adgnon. This wine was quite a chal\u00adlenge for us dur\u00ading fer\u00admen\u00adta\u00adtion. Lin\u00adda and I stopped by the win\u00adery after class late one night to find that the fer\u00admen\u00adta\u00adtion was up to 99 degrees; too&nbsp;hot.<\/p>\n<p>High tem\u00adper\u00ada\u00adtures like this will kill the yeast and stop fer\u00admen\u00adta\u00adtion. Lin\u00adda and I were faced with the sit\u00adu\u00ada\u00adtion of need\u00ading to bring the tem\u00adper\u00ada\u00adture down with\u00adout adding water to the <a href=\"http:\/\/en.wikipedia.org\/wiki\/Must\" target=\"_blank\">Must<\/a>. Look\u00ading around the win\u00adery, I noticed that we had shrink wrap. From there we bought blocks of ice, encased them in the shrink wrap, ster\u00adil\u00adized them, and added them to the Must, intro\u00adduc\u00ading them into the macro bin of fer\u00adment\u00ading wine. This tac\u00adtic was suc\u00adcess\u00adful in low\u00ader\u00ading the tem\u00adper\u00ada\u00adture, allow\u00ading the wine to com\u00adplete its fermentation.<\/p>\n<p>We just released this vin\u00adtage. This Caber\u00adnet Sauvi\u00adgnon has a rich and full bod\u00adied fla\u00advor, low in tan\u00adnin. This is an excel\u00adlent\u00adly bal\u00adanced wine; though hot due to an alco\u00adhol con\u00adtent of 15.4%. This does not take away from the taste.
